What I Recreated: The Special "Meatball"

The Dish: The "Special" meatball- spicy chicken and beef atop parsnips with parmesan cheese and breadcrumbs topped off with pesto and a slice of focaccia bread.
What is inside

Who would of thought that a meatball could be so famous?! These sort of "NYC Chains" are what I like to think of as "NYC niche chains." Take something simple and nostalgic: the meat ball, mac and cheese, PB and J or grilled cheese, and turn it into a goldmine. With a three hour wait on some weekend nights, that is just what The Meatball Shop did.
My recreation
Crab cake "meatball" with pesto all atop sauteed parsnips with a sprinkle of cheese, and all of that atop greens and reds.
store-bought pesto (fresh from Agata and Valentina)
pre mixed, un-cooked crab cake- I split it into 4, made some balls, and half-sauteed half-baked them
parsnips mixed in olive oil and some Sicilian cheese
watermelon, sliced
arugula
s&p
After sauteing and baking away my indecision on how to go about cooking this concoction I happened to make a delicious dinner.
If you find yourself reminiscing about spaghetti and meatballs or meatball subs/hoagies/Italians (it's a Maine thing), you have got to try The Meatball Shop.
