ciabatta bread
sauteed Mushrooms
hummus
goat cheese
Middle Eastern chopped salad (cucumbers, red onion, tomatoes, in olive oil and vinegar)
This week's Mediterranean restaurant is a cute little place around Union Square, Manhattan. They also have a location in NoHo. This sandwich was an interesting mix of sorts, and it was a very generous portion (maybe those carbs helped me run 12 miles the following day, or the raisins I downed at mile 9, hmmm).
My recreation
portobello mushroom- sliced, sauteed in coconut oil, a touch of sesame oil, balsamic vinegar, garlic, and Retsina wine
goat cheese from Spain
hummus from Fairway ($2 and pretty good!)
tahini
a swiss chard leaf
whole wheat couscous
I placed the swiss chard leaf on a plate and lay the mushrooms on top. I put some hummus, goat cheese, and tahini (my love), on top of the mushrooms, and then added the couscous on top of all of this. Gourmet? Could be. Delicious? Absolutely. Creative? You Betcha

Note: Mushrooms make Vitamin D just as we do, put your mushrooms out in the sun for 15-30 minutes before eating them for an extra boost.
